Background
I eat these pancakes for nearly 70% of my meals in an average week. This is because this is the easiest recipe of all time and pancakes are delicious. You can even make these vegan, depending on your dietary vibes.
How to Make It
Cut a (very ripe) banana into chunks and place inside a bowl. With a fork, mash the pieces until you've made banana mush.
Non-Vegan
Add in two eggs and whisk together. All set to to griddle!

Vegan
Add a third cup of oat flour and a third cup of coconut milk. Adjust the ratios as needed—you want the mixture to be batter-like.
Once you've got your batter all ready to go, coat a cooking pan with a tablespoon of coconut oil. Pour half your batter into the pan and cook away. The pancakes are done when the sides are golden brown.
