Ingredients

  • 2 bunches of kale

  • 2 handfuls of spinach

  • 2 tablespoons raw sunflower seeds

  • 1/2 shallot

  • 4 cloves garlic

  • 1/2 lemon juiced

  • S&p to taste

  • 1/2 tablespoon butter

  • Handful of basil

"My fiancé and I have also become quite infamous for our hand made raviolis. So much so that we have made them available for purchase! On Saturday, we shop and prepare the meals and on Sunday we deliver.

 

We love to create delicious recipes and share them with our friends and family, so this has been such a fun undertaking for us. We would love to share with you too! Or, if you are feeling adventurous and want to try on your own, here is the recipe for our kale, spinach, and basil ravioli with citrus olive oil." 

 


Step One: Ravioli Dough
 

Ingredients (4 servings)
 

  • 2 cups Semolina Flour

  • 3 eggs (room temp)

  • Splash of water

     

  1. Combine flour and eggs with whisk. add a splash of water and let it sit, covered, for about 20 minutes.

  2. Boil ravioli after it is freshly pressed for about 3 to 5, or until al dente.

 

Step Two: Ravioli Filling

Ingredients (4 servings)

  • 2 bunches of kale

  • 2 handfuls of spinach

  • 2 tablespoons raw sunflower seeds

  • 1/2 shallot

  • 4 cloves garlic

  • 1/2 lemon juiced

  • S&p to taste

  • 1/2 tablespoon butter

  • Handful of basil

  1. Sauté chopped garlic and shallot in butter

  2. Add kale and lemon juice. cover and simmer for about a minute.

  3. Add spinach and simmer until soft.

  4. In a separate bowl, combine basil and sunflower seeds with sauté and blend in a food processor.

Step Three: Ravioli Filling

Ingredients (4 servings)​​
 

  • 1/2 cup olive oil

  • Zest from 1/2 orange and 1/2 lemon peel

  • 4 cloves garlic

  • 1 tablespoon butter

  • S&p and crushed red pepper to taste

  1. In a sauce pan, simmer olive oil with lemon and orange zest for 2 minutes.

  2. Add garlic, butter, s&p, and crushed red pepper. Simmer for 2 minutes. 

The Science Behind It
 

Our handmade raviolis are made with high quality semolina flour imported from Italy. Semolina is derived from durum wheat and has many health benefits in comparison to AP flour.

 

Semolina flour helps aid in digestion, as it undergoes a more gradual absorption in the stomach. It is rich in magnesium, which promotes the cell’s insulin sensitivity and regulates blood sugar. It also contains 13% of the recommended daily intake of iron and 36% of folate. We shop our local farmer’s markets for the remainder of the ingredients, ensuring our final product is of the freshest and best quality!
