Ingredients
1/2 avocado
1/2 squash
5 cauliflower pieces
handful of spinach
1/2 lemon
apple cider vinegar
sea salt
pepper
Optional:
fresh herbs (oregano, rosemary, thyme)
How To Make It
Boil an inch or two of water in a pot. Dice half a small squash. Throw the squash and five pieces of cauliflower into the pot and take them out once cooked. (Approximately 5-7 mins)
Once the vegetables are cooked, put a tablespoon of coconut oil onto a pan and sauté until the skin is slightly burnt.
Place the vegetables on a bed of spinach. Add diced avocado. Put 1-2 tablespoons of apple cider vinegar, a dollop of olive oil, and some sea salt and pepper on the latter. Lemon squeeze optional but recommended.
