1 cup sliced mushrooms

1 clove garlic

4 tablespoons tahini

Micro greens to top

"A super easy week night meal I made recently was this sesame noodle stir fry. I used Explore Cuisine edamame spaghetti (7 net carbs and 24 grams of protein per serving) which had amazing texture and flavor for this dish. I also made my own tahini which was so fresh and delicious! It is super easy, just grind up sesame seeds (I used my vita-mix) and then stir in olive oil."
How to Make It

Cook noodles according to instructions on package.

Heat pan. Once heated, add in olive oil to sauté veggies.

Add chopped garlic to pan, then add in mushrooms and bok choy. Sauté until tender.

Once noodles are done, strain and add to pan with veggies and tahini.

Toss all ingredients together in pan.

Plate and top with micro greens.
